After trying many different recipes of chicken wings or niblets, I’ve created my own mix to marinate the chicken wings. You may use skinless wings but they taste best with skin-on.
Wash and pat dry 1 KG skin-on wings. Use these ingredients to marinate the 1 KG wings:
- 1 tsp red pepper powder or paprika
- 1 tsp crushed red pepper or red pepper flakes
- 1 tsp tikka or tandoori masala
- 1 tsp chaat masala
- ¾ tsp garam masala
- 1 tsp white cumin powder
- 1 tsp garlic powder (or grated)
- ½ tsp ginger powder (or grated)
- 1 tsp carom seeds
- 4 Tbsp Greek yogurt
- 2 Tbsp oil
- 1 Tbsp lemon juice
- Salt to taste (about 1 tsp)
- You may also use some MSG/Ajinomoto or chicken powder
To prepare the marinade. Mix yogurt, oil and lemon juice in a mixing bowl. Add the dry ingredients and mix everything well.
Then add wings to the marinade and coat them well. Cover and let marinate in the refrigerator for a minimum of 2 hours.
For best result, grill or BBQ the chicken wings. These wings can also be prepared in the oven or under the broiler. Brush both sides with oil and lemon juice after these are half-cooked.
