Pakistani-Style Chicken Wings

After trying many different recipes for chicken wings, I eventually came up with my own marinade. You can use skinless wings if you prefer, but I find they taste best with the skin on.

Wash and pat dry 1 KG skin-on wings. Use these ingredients to marinate the 1 KG wings:

  • 1 tsp red pepper powder or paprika
  • 1 tsp crushed red pepper or red pepper flakes
  • 1 tsp tikka or tandoori masala
  • 1 tsp chaat masala
  • ¾ tsp garam masala
  • 1 tsp white cumin powder
  • 1 tsp garlic powder (or grated)
  • ½ tsp ginger powder (or grated)
  • 1 tsp carom seeds
  • 4 Tbsp Greek yogurt
  • 2 Tbsp oil
  • 1 Tbsp lemon juice
  • Salt to taste (about 1 tsp)
  • You may also use some MSG/Ajinomoto or chicken powder

To prepare the marinade, mix the yogurt, oil, and lemon juice in a bowl. Add the dry ingredients and mix well.

Add the chicken wings to the marinade and toss until they are evenly coated. Cover and marinate in the refrigerator for at least 2 hours.

For the best results, grill or BBQ the chicken wings. You can also cook the wings in the oven or under the broiler. When the wings are halfway cooked, brush them on both sides with a mixture of oil and lemon juice.
